Dragon fruit (pitaya) is prized above all for its dramatic natural colour: deep purple-red to violet, with no additives. The flavour is mild and lightly sweet, gentle and refreshing rather than bold, with a subtle crunch from tiny seeds. It is the lowest-acid, mildest-tasting product we carry, which makes it the perfect natural colourant and a clean canvas for blends.
